{Thin French Pancakes}

3 eggs
1/2 cup sifted flour
1/2 teaspoon salt
1/2 cup milk
2 tablespoons salad oil
____________________________
~beat eggs until yolks & whites are mixed
~add flour and stir until smooth
~combine milk & salad oil in measuring cup
~stir into egg mixture until batter looks like heavy cream
~pour spoonful of mixture onto a hot greased griddle
~when little bubbles appear on top, flip & brown the other side

...in honor of pancake day i decided to make my great grandmother's recipe!
i made mini pancakes, so i could have a bigger stack :)
...you can be so creative with your toppings
french butter, berries, creme fraiche
or whatever your heart desires!
